Chicken Parmesan Burgers

Recipe from Elly Says Opa!

Mmmmm... these were excellent. The burgers had a really great flavor! This recipe makes 4 good-sized burgers. I grilled mine instead of broiling them.

Ingredients:
1 lb ground chicken
1/4 c grated Parmesan
1/4 c Panko
2 t Italian seasoning
1/4 c chopped parsley
1-2 cloves garlic, finely minced
1 shallot, finely diced
Salt & pepper, to taste

4-5 button mushrooms, sliced
Small onion, thinly sliced into half-moons
Marinara sauce
4 slices Provolone
4 buns

Directions:
Lightly mix together all ingredients for the burgers - from the ground chicken to the salt & pepper. Form it into 4 patties. Set in refrigerator for about 30-45 minutes to allow the flavors to blend.

Preheat grill. Cook burgers until they register about 165 degrees in the middle - about 5-6 minutes per side.

Meanwhile - in a small saucepan saute your onions and mushrooms until tender and toast the buns.

Once the burgers are done. Top them with about 1-2 tablespoon of marinara, and a slice of cheese. Stick under the broiler until cheese is melted.

Build your burger by topping it with a bit of the mushroom/onion mixture.

I served these with a salad.
