Lean Chicken Tenders

Recipe from Kelly Cooks... and Other Amazing Feats

This was a really good, simple recipe.  You could pretty much do whatever seasoning you like in it.  I think it would be good maybe with some paprika or something a bit spicy.  But J and I both liked these, and I'd make them again!  I served them with some honey mustard for dipping, and baked garlic fries.

2 boneless, skinless chicken breasts
1/4 c egg whites
1/2 c instant oats
1/4 c sliced almonds, crushed
1 T italian seasoning
Sea salt and pepper, to taste

Preheat oven to 350 and coat a baking sheet with cooking spray.

Cut chicken breasts into strips and then pour (or dip into) egg whites to coat.  Place the chicken in a ziplock bag.

In a food processor or blender, mix the oats, almonds and seasonings.  Place oat mixture in bag and shake to coat chicken.

Place the chicken on the baking sheet and bake for about 20 minutes.
