Pasta w/ Sweet Beans and Basil 'Cream'
Recipe from Eat Better America
This looked like a really simple weeknight meal that would be quick and cheap to throw together.
I thought it was pretty good. I would recommend adding a bit more salt and some pepper. And it's definitely better same day. It's not a rave recipe, but it's something I'd make again for a quick fix. :)
Ingredients:
12 ou uncooked whole grain or whole wheat pasta (I used rotini)
1 1/2 c frozen sweet soybeans
1 c soymilk
1/4 c chopped fresh or 1 T dried basil
1 T olive oil
1 t salt
1/4 c grated Parmesan
Directions:
Cook pasta according to package directions in salted water. For the last 6 minutes of cook time, add the soy beans to the pasta. Drain and return to pot.
In the meantime, in a food processor mix the remaining ingredients except the cheese. Blend until smooth and then add to the pasta.
Cook the pasta with sauce over low heat for about 3 minutes, stirring constantly, until heated through. Remove from heat and stir in the Parmesan cheese. Serve immediately.
