Jalapeno Poppers and Fried Mozzarella

Along with the pizza my husband requested jalapeno poppers and fried mozzarella. This was my first attempt at both. After a minor 'cooking oil was WAY too hot' mishap, I got it figured out. :)

Fried Mozzarella
For the fried mozzarella I just bought a package of fresh mozzarella and cut it into about 1/2 inch thick slices. I used the same breading for both the mozzarella and poppers.

Jalapeno Poppers
Ingredients:
1 quart oil for deep frying
10 jalapeno peppers
1 c softened cream cheese
2 T chopped fresh cilantro
1 t minced garlic
salt and pepper to taste
3 eggs, beaten
1 c Italian bread crumbs
2 t garlic powder
1 c flour

Directions:
Preheat the broiler and then place your jalapenos on a baking sheet under the broiler for about 6 minutes, turning once, until lightly browned. Remove and immediately place them in an airtight container.

Heat oil in a saucepan to 375 degrees.

Whip together cream cheese, cilantro, garlic, salt and pepper.

Remove jalapenos from container and peel and remove skins and cut off stems. Remove seeds from inside. I used a small knife to dig in and remove the seeds.

Stuff each pepper with cream cheese mixture until full. I used a butter knife for this part.

Place the eggs in one bowl. The flour in another, and mix the bread crumbs and garlic powder in the last.

Dip the mozzarella and jalapenos first into the flour, then into the eggs and finally into the bread crumbs mixture. Place in hot oil until golden brown. Remove and they are ready to serve.
