Ratatouille with Chicken

So Cooking Light gets all crazy when bloggers post their recipes, so you can check it out at the link above.

This was really good. It had some great flavor!

Some changes I made - obviously I used chicken instead of tofu. I actually used a can of chicken that we had sitting around, so I didn't make any changes to how I cooked it.

I also only had enough fresh basil for the pesto coulis, so I just used dried for the ratatouille. I also only had dry thyme.

That's about all I changed. J and I both liked it! He even went back for seconds and took it in his lunch today. :)
