Grilled Steak w/ Blue Cheese

I made this recipe for J as part of our 1-year anniversary dinner.  We don't typically eat steak at home, so this was a special occasion.  We went to a local store that sells really good meat - he chose the NY Strip steak.

I didn't taste this, but he loved it!  He said the flavor was really good, and it ended up being perfectly cooked for him. :)

Ingredients:
1 T kosher salt
1/2 T ground black pepper
1/2 T fresh thyme leaves, chopped
Canola oil
1 NY Strip steak, brought up to room temp
1/4 lb blue cheese, room temp
1 T heavy cream
Parsley, if desired - we skipped this

Directions:
Preheat grill to high.  Mix the salt, pepper and thyme in a bowl.

Brush the steak with oil, then rub the thyme mixture on both sides.  Grill steak to desired doneness - it was about 7-8 minutes per side for a medium-rare.

While steak grills, mash the blue cheese into the cream, so that it is chunky but also a bit creamy.

About 1 minute before steak is done, place the blue cheese mixture on top of steak and let it melt very briefly.

Transfer steak to plate and let it rest for about 5 minutes.  Garnish with parsley if desired.
