Crispy Honey Ginger Chicken

This was quick, easy and good.  I loved the sweetness the honey added to the chicken, and the ginger taste. These were really good either drizzled with honey or dipped in BBQ sauce.

Ingredients:
2 c lowfat buttermilk
1/4 c honey
2 T ground ginger, divided
2 t garlic powder, divided
1 lb boneless chicken tenders (or chicken breasts cut into 3-4 pieces)
2 C panko
1 t seasoned salt
1/4 c whole wheat flour

Directions:
Whisk together buttermilk, honey, 1 T ginger and 1 t garlic powder.  Add chicken pieces, cover, refrigerate and marinade for at least 2 hours or overnight.

Preheat oven to 450. Combine panko, remaining garlic powder and ginger, salt and flour in a bowl.  Coat chicken pieces in panko mixture, and place on a wire rack sitting on a baking sheet.

Spray each piece with cooking spray or olive oil.

Cook for about 10 minutes. Flip chicken and spray other side.  Then cook for another 10-15 minutes, until cooked through.
