Recipe from Annie's Eats
This chicken was delicious! Moist and tender and very flavorful. Also - I took Annie's recommendation and made some tzatziki sauce to go with them, and it was a perfect match!
3 T EVOO
Zest 1 lemon
3 cloves garlic, minced or pressed
1 T fresh minced parsley
1 t kosher salt
1/2 t pepper
1 lb boneless, skinless chicken breasts, cut into 1 inch pieces
Whisk together the EVOO through pepper, then toss in the chicken. Cover and refrigerate for 2-8 hours.
Preheat grill to medium heat. Place chicken on skewers and cook until opaque throughout, 10-12 minutes, turning once.
