Tomato & Basil Orzo Salad

I got this recipe from the Cooking Light website (I don't think the picture on the site is actually this dish). It was delicious and could easily be made into a full meal by adding some shrimp or chicken.

I cut this in half since it's only the 2 of us. The original recipe says it yields 8-10 small side servings. We ate just about all of half the recipe.

Ingredients:
3/4 c dried orzo pasta
About 1 1/2 small to medium ripe tomatos, at room temperature
1/3 c chopped fresh basil
1 clove garlic, minced
1 1/2 T EVOO
1 T balsamic vinegar
About 1/8 c parmesan (I actually used closer to 1/4 c)
Salt & Pepper to taste

Directions:
Cook orzo according to directions on box, until barely tender to bite.

Meanwhile, rinse, core and chop the tomatos, and place in a bowl. Add the basil, garlic, EVOO and balsamic; mix gently.
When the orzo is done, drain and return to pot. Gently mix in the tomato mixture, parmesan cheese and the salt and pepper to taste.
