Roasted Asparagus w/ Cherry Tomatos

We love asparagus! Especially with balsamic vinegar - so when I saw this I knew it would be great! And it was! Except I think I used a bit too much oil - oops! Other than that - very good!

Ingredients:
About 15 asparagus stalks, ends removed
Cherry Tomatos, cut in half
1/2 T olive oil
Salt & pepper to taste

Dressing:
2 T olive oil
1 T balsamic vinegar
1 clove garlic, minced
Salt & pepper, to taste
Pinch of sugar

Directions:
Preheat oven to 400.

Cut asparagus into 3 pieces using angled cuts. Set those and the tomatos in a baking dish. Add the olive oil and salt and pepper and mix to cover.

Roast for about 5-7 minutes until asparagus are fork tender.

Meanwhile, mix the dressing ingredients. Make sure it is mixed together very well.

When the asparagus and tomatos are done, cover with the dressing and mix gently to coat.
