Avocado Tomato Stacks

Recipe from "...but where do you get your protein?"

I came across this recipe and thought it would be a great, light, easy side dish for a quick weeknight meal.  This was really delicious!  I loved the flavors that the cilantro-lime dressing brought to the tomato and avocado.


Ingredients:
1/3 c fat free milk
1 t vinegar or lemon juice
1/4 c chopped cilantro
3 T plain yogurt
1/2 t lime zest
1 clove garlic, minced
1/4 t salt
1/8 t ground cumin
Dash crushed red pepper flakes
2 medium tomatos, sliced
1/4 c red onion, thinly sliced
1 avocado
Dash pepper

Directions:
Prepare the buttermilk by combining the milk and lemon juice or vinegar and letting it sit for about 10 minuutes.

To make dressing, add the buttermilk and all ingredients through the red pepper in the bowl of a small food processor.  Process about 30 seconds until well blended. Cover and chill.
Note: I actually made the dressing on Sunday for Wednesdays dinner to cut back on the weeknight cooking time.

Layer 1 tomato slice, followed by sliced avocado and then onion.  Repeat 2 more times.  Spoon over the dressing and add a bit of pepper, if desired.

looks delicious and I love how well tomato and avocado pair together! Great spin off of caprese salad too!
