Garlic Shrimp Pasta

Recipe from Black Cat Kitchen


 This was a delicious alternative to Shrimp Alfredo.  Definitely slightly healthier. :)

J and I both enjoyed it.  However, the sauce turned out extremely thick.  So I would probably cut back on the cream cheese to maybe 6 ou., and/or add a bit more chicken broth, and probably cut back slightly on the Parmesan as well.  But it tasted great! 

Ingredients:
8 ou whole wheat or whole grain pasta
8 ou shrimp, peeled and deveined
5 cloves garlic, minced
1 shallot, diced
8 ou cream cheese, room temperature
1 cup chicken broth
Pepper to taste
1/2 c Parmesan cheese

Directions:
Cook pasta according to package directions.  Drain and place in servings bowls.

In a large skillet, saute the shrimp, shallot and garlic.  Once the shrimp is almost completely cooked, add the cream cheese, chicken broth, and pepper to taste.  Cook until cream cheese is melted and mixed well with the broth.

Remove from heat and stir in the Parmesan cheese.  Serve over pasta.
