Zucchini Strands w/ Pesto
I made dinner for my grandmother (Nanny) over the weekend. I wanted to keep it pretty light, since it's been so hot and gross here lately.
We have a ton of zucchini in the garden, and I had a lot of basil in the aerogarden, so I came up with this. It was really delicious - very easy to make. :)
Ingredients:
1 Zucchini, julienne sliced
1/2 c pesto
1 large tomato, chopped
Directions:
Blanche zucchini in boiled water for about 30 seconds. Remove into a bowl of ice water, to stop the cooking. Drain and squeeze zucchini to remove excess water.
Toss zucchini with pesto and tomato. Serve.
